Well and Good GF Muffins are light with a moist crumb texture, the flavour profile is sweet and subtle to allow for additions of fresh fruits, berries, nuts or choc chips.

This is a versatile mix that is easy to use and produces reliable results every time, it’s freeze thaw stable.

Scope This specification covers industrial packaged Gluten Free Muffin Mix.
Purpose The purpose of this specification is to cover the physical, compositional, handling, transportation, usage, storage and other parameters in relation to this product.
Product Description White to off white free flowing powder with sweet vanilla aroma.

Industrial Gluten Free Traditional English Cake

Ingredients Required:
  • Muffin Mix – 1 kg
  • Egg – 220 ml
  • Water – 280 ml
  • Soft Margarine – 250 ml
  • Sultanas – 500 g

Method:
  1. Place water, egg and margarine, then muffin mix into bowl.
  2. Using a beater, combine ingredients on low speed for 1 minute.
  3. Scrape down bowl.
  4. Mix on low speed for 1 minute.
  5. For freezable product mix for a further 1-minute on low speed.
  6. Add sultanas
  7. Spoon the mixture into greased cake tins.
  8. Bake at 170°C (fan forced)for approximately 45 to 55 minutes

NOTE: Baking instructions are to be used as a guideline only. Baking condition will vary between ovens.
