Description

Well and Good flours are designed as a complete product, enabling our customers to bake like they would with traditional wheat based flours. Traditional recipes are easily adaptable into Gluten Free options.

Well and Good GF Pastry Pasta Flour Has strong firming and gelling capabilities; which works best for pies, pastry and pasta products. Including Ravioli, Gnocchi, Pies and Sausage Rolls.

Scope This specification covers industrial packaged Gluten Free Pie and Pasta (P&P) Flour Mix.
Purpose The purpose of this specification is to cover the physical, compositional, handling, transportation, usage, storage and other parameters in relation to this product.
Product Description White to off white free flowing powder.
Composition Ingredients: Corn starch, rice flour, dextrose monohydrate, modified starch (tapioca, corn), thickeners (466, 464, 461), sugar, psyllium husk, iodised salt, vegetable gum (415), emulsifier (471), colour (turmeric)

Industrial Savoury Pastry (pie bottom, quiche)

Ingredients Required:
  • P&P Flour Mix: 1000 g
  • Puff pastry margarine (nuggets): 250 g
  • Water: 600 mL

Method:
  • Mix flour and margarine together starting on speed #1, then to speed #2 until
  • all the shortening is rubbed into the mix and no visible lumps.
  • Add water, continue mixing to a clear dough (1 – 2 minutes on medium speed).
  • Note: the dough may be sticky; roll on bench with dusting flour.

 

Industrial Puff Pastry

DOUGH
Ingredients Required:
  • P&P Flour Mix: 1000 g
  • Puff pastry margarine (nuggets): 50 g
  • Water: 650 mL

Method:
  • Mix flour and margarine together starting on speed #1, then to speed #2 until
  • all the shortening is rubbed into the mix and no visible lumps. Add water, continue mixing to a clear dough (1 – 2 minutes on medium speed).
  • Note: the dough may be sticky; roll on bench with dusting flour.

MARGARINE MIX
Ingredients Required:
  • Dough: 1000 g
  • Puff pastry margarine (nuggets): 300 g

Pastry Method (French):
  • Mix margarine and dough to a similar consistency as the dough. Wrap the margarine mix in the dough; using the French method; roll and laminate with three half turns.
