Well and Good Sponge / Cupcake mix gives rise to the perfect sponge cake it is light and airy in texture, tall and moist with the delicate flavour of natural vanilla bean.

Product options include: Aussie favourites such as lamingtons, Swiss roll, sponge cake, pound cake. Also make light coloured cup cakes, petit fours and thin dessert bases. Absolutely versatile and freeze thaw stable.

Scope This specification covers industrial packaged Gluten Free Sponge / Swiss Roll Mix.
Purpose The purpose of this specification is to cover the physical, compositional, handling, transportation, usage, storage and other parameters in relation to this product.
Product Description White to off white free flowing powder with sweet vanilla aroma.
Composition Ingredients: Sugar, Potato Starch, Rice Flour, Raising agents (500, 450), Modified Starch (1442), Vegetable Emulsifiers (471 from soy, 475), thickeners (466, 407), iodised salt, flavour.

Cup Cake

Ingredients Required:
  • Sponge / Cupcake FS – 1000 g
  • Water – 300 mL
  • Egg – 300 g
  • Cake Margarine – 80 g

Method:
  • Pre-heat oven to 180°C fan forced oven (195°C convection)
  • In a bowl, mix all ingredients on medium speed for 3 minutes.
  • Spoon or deposit the batter into prepared patty pans or muffin tins.
  • Bake for 21 – 25 minutes
    Note: Baking time may vary depending on oven.

TIPS: Tip out to cool on a wire rack.

Industrial Gluten Free Sponge

Ingredients Required:
  • Sponge / Poundcake Mix – 1000 g
  • Water – 450 mL
  • Egg – 350 g

Method:
  1. Place water, egg and then dry ingredients into bowl.
  2. Using a whisk, combine ingredients on low speed for 1 minute.
  3. Scrape down bowl.
  4. Mix on high speed for 3 – 4 minutes.
  5. Bake at 170°C (fan forced) for approximately 35 minutes
