Gluten Free Tortilla Recipe

Ingredients Required:
  • Tortilla mix -1000 g
  • Oil or Shortening – 2.5%
  • Water – 55% – 60%

  • Water temperature:    6° C – 36° C
  • Depending on type of equipment being utilized, the process will need to produce differing styles of tortilla dough.
  • Depositors / extruders will vary in performance, hence require differing dough structures.
  • Mixing Time:Low speed; 6 – 8 minutes until a clear dough is formed.

Store in a cool dry area away from direct sunligh.
